ZUCCHINI - CRUMB QUICHE

ITEMS NEEDED

1 - cup dry bread crumbs

1 medium zucchini

2 tablespoons olive oil

1/4 cup butter

1/4 cup flour

2/3 cup milk , scalded

1/2 cup Romano cheese

1 egg , beaten

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/8 teaspoon pepper

BUTTER a 9-inch saute pan and line with bread crumbs. Cut zucchini into very thin slices.

Allow to DRAIN on paper towels.

MELT  BUTTER,

ADD FLOUR

ADD SCALDED milk , stirring until thickened.

STIR in cheese, egg and seasonings.

ADD zucchini and ladle into prepared pie pan

BAKE at 350°F FOR 30 MINUTES or until set

Serves 4
